This is the most easy and delicious appetizer you can make!  I can’t resist when I see the clams go on sale I have to indulge!

You will need a few dozen baby neck clams or middle neck clams, wash them thoroughly and discard any opened clams. They should smell like the sea but not offensive. Place in a pot with about a cup of clam juice and a cup of white table wine a few tablespoons of olive oil and 3 to four garlic cloves. Bring to a boil to steam the clams for about 10 minutes. When the clam shells open they are done! Place them in a  bowl a sprinkle with fresh chopped parsley. I do not add salt maybe pepper.
