This is fairly quick stir fry that everybody liked. Twenty minutes and not too much to clean up!

Ingredients:

  • olive oil
  • 5  chicken breasts cut in strips
  • 1/2 cup chopped onion
  • 1/2 cup fresh or frozen bell peppers cut in strips
  • 1/2 cup frozen corn
  • 1/2 cup black beans
  • 1 cup cooked basmati rice
  • 1/2 cup chicken stock
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 2 pinches  of saffron
  • 3/4 tsp salt
  • two pinches of red pepper flakes
  • 1/2 tsp pepper
  • parsley spring chopped

Method: drizzle olive oil in  a medium hot  fry pan  and add onions, cook until translucent. Add chicken and cook until slightly browned and cooked through.
Add the spices and mix, then the beans, peppers and corn, heat through. add a bit of chicken stock and let the flavors meld together.  Taste and add more salt if needed.
Add the  cooked rice, toss and serve!
