I can’t wait for summer peaches! If your headed to a picnic this summer and you don’t know what to bring, this is it! You can use it to top gluten free tortilla chips or use it on top of grilled chicken or fish. Make it as hot as you like with jalapenos or on the sweeter side.
Ingredients:
- 1/4 cup chopped red onion
- 1/4 cup green bell pepper chopped
- 1/4 cup orange pepper or ( optional jalapeno pepper) chopped
- 1 peeled and chopped into tiny squares mango
- 2 peeled and chopped into tiny squares peaches
- 1 tomato chopped into tiny squares
- 1 juice of lime
- 1/2 tsp salt
- 1 tblsp agave
- ground black pepper
- 1/8 cup cilantro chopped
Toss ingredients and refrigerate for at least an hour. Make the day before and the flavors will really blend!
