What I love about spring is the refreshing fruit that pops up in the market or later in your garden like strawberries! Mid-June here in New England. This salad is so refreshing and simple, I picked dandelion leaves in my yard for this you can also purchase them in the store. If you don’t grow your own dandelions make sure the foraged dandelion leaves and flowers are pesticide-free and also where the pups don’t go do their business.  Wash thoroughly. I do like to eat what is growing in season. Pairing a bitter green (arugula works as well) with sweet fruit is amazing tasting and good for your body. 

  • Wash and dry a cup of dandelion leaves a layer on the bottom of the bowl
  • Peel and chop a fresh Grapefruit into bitesize pieces
  • Peel and separate a few mandarin oranges
  • Wash and cut in half Strawberries
  • One cup Pomegranate seeds
  • Some mint leaves washed and chopped

Grapefruit is very high in vitamin c an immune system builder! It helps to relieve kidney stones, and cleans the liver by removing toxins. Reduces bad cholesterol and can help reverse gum disease, only 5 ounces of grapefruit juice a day can prevent lung cancer. Grapefruit charges up your metabolism to help lose weight.

For the dressing use squeeze 1/4 cup grapefruit juice and maybe juice a mandarine sprinkle with a tiny bit of sugar, stevia or (my choice) local honey to cut the bitterness of the grapefruit if you like, and add a pinch of sea salt-let the juices meld together, pour over salad- it is quite tasty!
