Who said a healthy lunch was boring ! I can eat this every day or lunches like it. It is so satisfying and packs a lot of vitamins and protein to help you through your busy day! Make it vegetarian by just omitting the chicken. Make it with tuna or leftover crumbled salmon leftovers. Cook the quinoa and the bean salad ahead to have all week as a staple.  The grapes are like a dessert.

The black bean corn salad:

Ingredients:

can of black beans drained
can of corn or a cup frozen corn
small chopped onion
salt and pepper
pepper flakes
1 tablespoon cilantro dried or a 1/4 cup chopped fresh
tblsp olive oil
Saute the onions in olive oil until translucent
Add the beans and corn. heat them up then add the spices stirring together

 

make the  Quinoa according to the package, cut the avocado, roast some grape tomatoes or heat in the pan, slice some roasted chicken and add the  grapes.

Put on you favorite tunes and enjoy a healthy break in your day.
